Thai Coconut Curry Chicken (KLEINHANS😋)with Vegetables

Ingredients:
• 1 lb (450 g) chicken(KLEINHANS ) breast or thighs (cut into bite-sized pieces)
• 1 tablespoon vegetable oil
• 2 tablespoons red curry paste
• 1 (14 oz) can coconut milk
• 1 cup chicken broth
• 1 tablespoon fish sauce
• 1 tablespoon soy sauce
• 1 tablespoon brown sugar
• 1 tablespoon fresh lime juice (about 1 lime)
• 1 red bell pepper (sliced)
• 1 cup snap peas or green beans (trimmed)
• 1 cup carrots (sliced or julienned)
• 1 cup baby corn (optional)
• 1/2 cup fresh basil leaves (chopped, for garnish)
• 1 tablespoon fresh cilantro (chopped, for garnish)

Cooked jasmine rice (for serving)
Instructions: Cook the Chicken(KLEINHANS ):

  1. Heat vegetable oil in a large skillet or Dutch oven over medium-high heat.
  2. Add the chicken pieces and cook for 4-5 minutes, or until no longer pink. Remove the chicken from the skillet and set aside.
    Prepare the Curry Base:
  3. In the same skillet, add the red curry paste and cook for 1-2 minutes until fragrant.
  4. Stir in the coconut milk and chicken broth. Bring to a simmer.
    Add Vegetables and Flavorings:
  5. Add the sliced red bell pepper, snap peas (or green beans), carrots, and baby corn (if using). Simmer for 5-7 minutes, or until the vegetables are tender.
    Combine and Finish:
  6. Return the cooked chicken to the skillet. Stir in the fish sauce, soy sauce, brown sugar, and lime juice. Cook for another 2-3 minutes until everything is heated through and the chicken is cooked to 165°F (74°C).Adjust seasoning to taste with additional fish sauce or lime juice if needed.
    Serve:
  7. Garnish with chopped fresh basil and cilantro.
  8. Serve the Thai Coconut Curry Chicken with Vegetables over cooked jasmine rice.
