Ingredients:
For the chicken:(Kleinhans of course)
– 4 boneless, skinless chicken breasts/fillets
– 1 tablespoon olive oil
– 1 teaspoon ground cumin
– 1 teaspoon chili powder
– Salt and pepper to taste
For the cheese sauce:
– 2 tablespoons butter
– 2 tablespoons all-purpose flour
– 1 cup milk
– 1 cup shredded Mexican blend cheese (or cheddar cheese)
– 1/2 teaspoon garlic powder
– Salt and pepper to taste
For garnish:
– Chopped fresh cilantro
– Sliced jalapeños (optional)
Instructions:
- Preheat your oven to (190°C).
- Season the chicken breasts with cumin, chili powder, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until browned.
- Transfer the chicken to a baking dish and bake in the preheated oven for about 20-25 minutes or until the chicken is cooked through.
- While the chicken is baking, prepare the cheese sauce. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly browned.
- Gradually whisk in the milk, making sure to eliminate any lumps. Cook for a few minutes until the sauce thickens.
- Stir in the shredded cheese until melted and smooth. Add garlic powder, salt, and pepper to taste. Keep warm over low heat.
- Once the chicken is cooked, remove it from the oven. Serve the chicken breasts with the cheese sauce poured over the top.
- Garnish with chopped cilantro and sliced jalapeños if desired.
